Opskrift: kokostoppe. / Recipe: coconut tops.

Lørdag var jeg i fuld sving med at skrive, men havde brug for en lille pause og tænkte at jeg ville benytte lejligheden til at lave en omgang kokostoppe. De er perfekte hvis man bare lige vil have lidt sødt, uden at det tager alt for lang tid at lave. ❤

On Saturday I was in full writing-mode, but at some point I felt like I needed a break and decided it was the perfect opportunity to create a round of coconut tops. They are perfect if you crave something sweet without wanting to spend too much time in the kitchen. ❤

100 g kokosmel, 1/2 dl sukker, 1 æg, 1 spsk revet øko citronskal, 25g smør. Garnering: ca. 50 g mørk chokolade. / 100g coconut flour, 1/2 dl sugar, 1 egg, 1tbsp grated lemon zest (eco), 25g butter. Garnish: ca. 50 g dark chocolate.

Fremgangsmåde: bland kokosmel med citronskal og smør i en skål. I en anden skål, bland æg og sukker. Tilsæt kokosmelblandingen. Beklæd en bageplade med bagepapir og lave kokostoppe (eks. vha. et par teskeer). Der er til ca. 15 små.
Bag toppene ved 175 grader celcius i ovnen til de er gyldne, lad dem køle helt af inden chokoladen smeltes og bundene dyppes her i. Lad køle. Og voilà! Klar til afternoon tea. 🙂

Mix the coconut flour/grated coconut and mix it with lemon zest and butter in a bowl. Take another bowl, mix egg and sugar. Pour the coconutmix into the egg-mix. Cover a baking tray with a cooking sheet (or similar) and form the coconut tops (using a couple of teaspoons for example). This batch makes approx. 15 little tops.
Bake the tops at 175 degrees celcius (347F) until they turn golden, let cool before heating up the dark chocolate and dipping the bottoms. 🙂 Let the chocolate harden. Et voilà! Ready for afternoon tea. 🙂
